It’s been a while since I’ve talked with you about building the business of Dancing Bee Baking and I thought it’s time to update you a bit. (See, I assume it’s interesting to you!)
After some great experiences with Washoe County staff and a couple of first orders, now I’m doing the boring, repetitive work! And I’m taking 2 steps back for every 1 step forward. At least it feels that way.
First, I have to test all of my recipes and adjust them for Washoe Valley elevation and climate. Recipes I’ve used for so many years are no longer the reliable workhorses of my world, instead they have to be changed- just a bit – but changed none-the-less. And so far most cookies need 2 runs to get right. First, with all the recommended adjustments for 5,000 ft elevation and then to “fix” whatever doesn’t seem right.
On the other hand, cakes seem to do just fine with one simple run of the recommended adjustments. Cakes are sweet things, all nice and friendly. Cookies are a bit belligerent. They seem to want more time and attention than I planned! Don’t they know that I love them?
As a result, I’m doing a lot of recipe testing in Washoe Valley. Also I’ve been spending time in California with family (I love them so that’s good) and it’s impossible to test recipes for Washoe Valley (5,000 ft) when I’m in Silicon Valley at 100 ft elevation! So I have to put recipe testing on hold for the California time.
Plus, I have in my mind that I’ll have a photo and brief description of every single item I make on the DBB web pages, so people can take a look see- and when their mouths water, they’ll just have to order from me. That’s a lot of photos, so I’m working on that too. Well, hubby Doug of PhotoRadiance Photography is working on that. I make it, he photographs it, and it’s a lot of items.
Target date for Grand Opening: Early September 2016. Think I’ll make it? Step by step by step, I darn well better!
By the way, my new double ovens will be installed next week sometime. Hooray! One item nearly off my list. (Did I hear someone say that then I’ll have to learn how to use them? Find the hot and cold spots? Figure out when convection helps and when it doesn’t? Spoil Sports!)
